Recipe Rally: Chicken

I’m joining in the fun from CHBM:

I haven’t come up with a name for this dish yet, so please feel free to name is as you wish. Hopefully you won’t name it chicken- I-will-never-make-again or what-was-she-thinking-chicken? If you do, well that’s cool too, not everyone likes the same stuff, right?

1 pound of boneless skinless chicken breast

package of laughing cow light cheese

red pepper seeded and cut lengthwise

zucchini sliced thin lengthwise in 2 inch segments

yellow squash sliced thin in rounds

Mrs. Dash

Carefully cut each chicken breast in half to form a heart shape. Smooth one triangle of cheese onto the chicken and fold breast back in half. Now here is where I mix things up a bit… If you are making several batches don’t waste tinfoil and make individual packets, place all items in a baking pan and cover. If you are making a few for just your family and it comes out even or better tinfoil wise, make individual packets. (Come on, you guys know how green and frugal I am!) Either way, place a layer of yellow squash down on the bottom with chicken on top of it. Place the remaining veggies “hugging” the top of the chicken. Sprinkle a bit of Mrs. Dash and you are ready to seal the packet and bake on 350 (or low broil if you have that setting like I do) until chicken in cooked all the way through. I then open the packet (still on broil) for about 3-5 minutes to sear the veggies a bit.

This recipe is quick and easy but also is great for making ahead and storing in the freezer. Pull a packet or two out and you have a quick ready made dinner! Oh, forgot to mention, on top of being tasty and easy, this is also low carb and healthy. But, shhhh…. don’t tell your kids!

    Looks yummy!!
    My husband wouldn’t eat it, but maybe I can whip up a few and throw in the freezer for lunched or when he’s not home. I LoVE Zucchini!
