A Groundhog Thanksgiving…

We are doing 2 Thanksgivings this year, not because we are extra thankful, but because we could not coordinate everyone to be here on one day. And while I am looking forward to spending time with friends and family, I am getting a tad stressed on trying to plan to huge meals that won’t bore my family a second time around. On Wednesday my MIL is coming into town and we will be doing Thanksgiving #1 on a week from today. We have Thanksgiving every year together and there are some specifics things that we have to have - fried turkey, Korean sweet potatoes, sweet potatoes with marsh mellows for my FIL, apple pie and pecan pie. The rest is variable. On some of the mentioned items, I am thinking of making extras and freezing them for Thanksgiving #2.

For Thanksgiving #2 we are having some family friends over who recently moved here from Michigan. From my discussions with them, they are very open for ideas on what I could serve. I know we will have turkey again, maybe some ham (yuck! times 12) and I will most likely make my special stuffing. Besides that, I can do all the traditional, but would like to spice things up a little as we most likely will have the “traditional” a few days before.

So, with that being said, I am imploring all my blogging buddies to help me out. What are some of your favorite dishes and recipes?

I am thankful…

for being fortunate enough to have two Thanksgivings. I realize that there are many people at this time of year that can barely scrape together enough money to fund one grand Thanksgiving. There are even many more yet, that can’t afford any food at all. We, boogies, are truly blessed.
